How do you keep fry from the intake of a hob filter without risking destroying the pump?

Cheap solution: panty hose and a rubber band.  Remove and clean off panty hose once a day.

$3 solution:  Sponge filter placed over the intake.

I used the nylon, and hated it.
The sponge is great. I buy the largest sponge filter I can, and cut it in 2 peices, so I get twice the bang for my buck :P
