How can I help manage the swordtails to stop breeding?

Not much you can do (other than lecture them about abstinence  Wink) . One solution is to separate the males from females; you'll have to do this a few times, as females will continue to have young for a while, and some may be male.

I had the same problem with my platies... one male young and I couldn't catch him in my planted tank; dozens of platies soon....
